I hope Dredd fans can weigh in. Is there a classic, can't miss Dredd story I should try?

Somehow, I never managed to get on the Dredd train.

I love the Bolland covers and even what I understand about the general idea.

But when I tried a few stories as a kid, I just got confused and never went back. Is there a general agreement about what the best Dredd-stuff is?

Excellent movie.  Great entry point for someone like me who had very little understanding past the covers of books I saw on the newsstand of that world and characters.

I love that movie more than I should.  I just recently rewatched it and I loved every bloody moment of it.

I really enjoyed the movie.

I've read the odd issue of 2000AD and liked some of the JD stories without loving them, although this thread is making me think that I should check out more to form a proper opinion.

I can't suggest anything recent as I haven't read 2000AD for long time but from  the early days:

Any collection of Brian Bolland's work on the series would be worth a look and give you a good feel for the strip.

Robots Wars (originally in progs 10-17).

The Cursed Earth (progs 61-85). Mostly drawn by Mick McMahon but with some notable episodes by Brian Bolland.

The Day The Law Died (Judge Cal) (progs 86-108) Art by McMahon, Bolland and several others including Ron Smith, a veteran UK artist who made his debut on the series here.

Punks Rule (prog 110) was a nice little one-off drawn by Brian Bolland, with Dredd reclaiming the streets of Mega-City One following the rule of Judge Cal.

Judge Death (progs 149-151) A Bolland classic.

The Judge Child (progs 156-181). Art by Bolland, McMahon and Smith.

Judge Death Lives (progs 224-228) Bolland art.

Block Mania (progs 236-244) Art by McMahon, Smith, Bolland and Steve Dillon

which leads directly into

The Apocalypse War (progs: 245-267, 269-270) The return of original Dredd artist Carlos Ezquerra who drew all 25 episodes.

I loved the Carl Urban movie.  I don't think he took the helmet off once.  How I wish The Mandalorian followed suit.

Robbie’s list is what I would call the classic list of must read stories.

There have been some really good ones since, so I’ll add a few.
Unfortunately, the list by necessity, contains some spoilers to stories that
only really worked if you read them in real time.

The Dead Man (which was a real mic drop series)
Necropolis
Trifecta (which is actually three series that no one knew were related until
Dredd kicked a door in within his story)
Origins

After that, I’m not really au fair with what has been happening.

And yes, get thee to the Karl Urban movie - one of the best adaptations of a
comic ever. I am filled with dread (no pun intended) on the news that the
THOR: Love and Thunder director may be getting a shot.
