Don,
I use a handful of different brands of paint. Polly S and Games Workshop paints are the two main types. Lately, I've been buying acrylics at my local craft shops. The quality is the same, the prices are lower, the selection is MUCH better and the amounts you get in each "jar" is greater.
Check these two brands out if you get the chance, I've had good results with them so far.

I couldn't tell you exactly which color I used in any one spot. I always start with a really dark base coat and work up at least two or three layers of successively brighter highlights. I didn't do that for Cap's red portions as much as I really wanted him to stand out, so his darker shaded areas were kept at a minimum. The only place they really stand out is between his fingers and a few spots on the boots that the camera didn't pick up.
When I get started on She-Hulk, I'm going to try using paint remover for the first time so I'm not just adding several coats of paint. I'm hoping for the best and I'll share my results.
Best of luck to you!
