There have been three so far.
The first is Mar-Vell. He debuted in Marvel Super-Heroes #12 in the late 60s and continued until the "Death of Captain Marvel" OGN in 1982. Not much in the way of reprints - there's a Marvel Masterworks volume (don't know how far it got) and a tpb called "The Life and Death of Captain Marvel" which reprints the Starlin stuff. (CM #25-34 + Death - aka "the good stuff" :-) ) No Essentials yet. I'd get the Starlin book and skip the Masterworks. Hold out for an Essential if you get interested in the earlier stuff. Mar-Vell was one of those characters they were never sure what to do with, which will either make the series more interesting for you or annoy you.
The second is a black woman named Monica Rambeau. She debuted in Amazing Spidey Annual #16 and joined the Avengers shortly thereafter (#227-294). After leaving the Avengers, she's basically putted around Marvel Limbo, popping up here and there, including two one-shots. She's currently in NextWave with a new name.
The third is a "test tube baby" son of Mar-Vell named Genis. Basically Mar-Vell's girlfriend used some of his genetic material to impregnate herself. He debuted as "Legacy" in a Silver Surfer annual in the late 90s, and popped around here and there. Then he got his own shortlived (6 issue) series and took the Captain Marvel name. After the Avengers Forever series, he got merged with Rick Jones and starred in two back to back ongoings (34 and 25 issues respectively - there was a restart in the middle in an effort to gain readers). After those ended, he got folded into Thunderbolts and was recently killed off in #100.
And yes, I imagine a large part of the reason they keep trying out new Marvels is to retain the rights. (Although I'd think leaving the Starlin book in print would cover their bases.)
