Batman/Sabretooth - the Wolverine/Joker battle would consist of some maniacal laughter, followed by a "SNIKT", followed by a disembowled clown lying in several pieces on the floor.

I'd have to go with Wolverine/Joker by O'Neil/Sienkiewicz if it's a long story of a killing spree by The Joker and revenge by Wolverine - although you'd have to stop short of killing on Wolverine's part for it to work.  I'd also like an 8-page backup story done by JB Silver Age style where Joker sets up a series of clues true and false to thwart the extraordinary powers of detection he hears that Wolverine has - unaware that Wolverine's detection skills are entirely different from Batman's.  Wolverine misses all the planted clues and tracks Joker because he's wearing corduroy pants and uses rare Italian shoe polish, or something like that.

If it were Batman versus Sabretooth it'd be by JB and just a knock-down drag-out brawl.  Wear a tarp before you open it.

Batman versus Sabretooth or Wolverine versus The Joker - which comic would you rather read?

No preference for me so I'm skipping straight to the bonus question!

Batman vs. Sabertooth by John Byrne (pencils/inks/story) and a trained attack dog (to keep editors, inkers and fancy pants colorists away).  Byrne does the best Batman of any artist around today and he's about all that would get me interested in such a comic.  

Wolverine vs Joker by Denny O'Neill, Neal Adams and a time machine set to 1978.
