There are certain characters for whom the "tragedy of their condition" is central to their story, Ben, Cyclops and Rogue being the obvious first examples. Take away the tragedy and you pretty much take everything that's interesting about them.
This is Ben Grimm's central theme; without it, he's still a war hero and a pilot, but these traits don't grab the audience and demand attention like being stuck in the body of a monster.
Cyclops, on the other hand, would still be a capable leader, and that's probably enough to keep him around as a competent character. But it would relegate him to second tier, with someone like Wolverine getting all the face time.
Oh wait, that happened anyway. Still, I pick Cyclops.

I wouldn't want to see those changes made to either one, but if I have to pick one, It's Cyclops.

Cyclops. The Thing being able to change back from a monster at will reminds me too much about one particular Saturday morning cartoon...

Ben Grimm. He has gone through periods where he could control transforming. He's even gone through periods where he's stuck as human and used a Thing exo-suit! But he pretty much came to terms with his looks a long time ago [in real time, not comic-book time].
Scott is relatively boring as a character otherwise, as always having to cover his eyes was his one real flaw, as well as his greatest personal nightmare. Take that away, and he becomes Alex Summers.

Cyclops, One of the appeal of the thing is the tragedy of him being a monster, that would change the core of his character. Cyclopes has changed so much since the early days that I don't thing people would even notice the change.

Cyclops is a sort of reverse Spider-Man. He lives a life where everyone around him is Uncle Ben, and only his vigilance keeps them safe. It's a tragedy waiting to happen and it informs his need to control things, which is why he trains himself and his team so hard. I wouldn't want to lose that. Ben's always gonna be a teddy bear you don't want to cross. As others have noted, Ben has been on the human/monster roller coaster many times and it didn't ruin him as a character. So he's the safer choice by far. Wednesday, 2/10 toss-up: which remake are you more looking forward to - Clash of the Titans or A Nightmare on Elm Street?
