Where are the studies that show that food without preservatives are healthier that foods with? ------------------------ It depends what the preservatives are, doesn't it. Lemon juice is a preservative (a natural one, mind) and clearly no one has a problem with lemon juice from a health perspective. But I thought there was some quite convincing studies suggesting that processed foods (as a whole) increase the chance of certain cancers.
When it comes artifical preservatives vs natural preservatives, I think the issue is that we know that natural preservatives are safe from thousands of years of use, compared to a lack of definitive knowledge about the safety of certain artificial preservatives.
For example, butylated hydroxyanisole has been shown in more than one study to cause cancers in certain animals. One study showed no correlation to a increase in stomach in cancer in humans. In California, it's classed as a carcinogen and similarly in Europe, you can't put it in food (a study . In Canada, though, food manufacturers can use it as a preservative.
Sodium benzoate is common in jams, pickles, sauces and drinks, and it's generally thought to be safe in low doses. But the FDA found in 2005 that it can combine with vitamin C to form benzene (a carcinogen). (Here's a link)
