Bluegrass group The Gourds covering Snoop Dogg.  I first encountered this on Napster labeled "Weird Al" yankovic.  Stupid internet.

The Folksmen (really Chris Guest, Michael McKean and Harry Shearer from the 'A Mighty Wind' movie) doing Start Me Up by The Rolling Stones.

The band "Big Daddy" would record modern songs in the styles of songs from the Fifties, usually with comedic intent. They did a cover of The Beatles "Sgt. Pepper's" album, however, with some nice stuff on it, my favorite being their take on "When I'm 64."

I’m fond of Faith No More’s cover of The Bee Gees “I Started a Joke”

I'd never heard that one. But have long been a fan of their cover of "Easy" by The Commodores. Mike Patton is a beast. 

There was a band called Kilt that did a Celtic-style cover of "I Was Made for Lovin' You" by KISS that was...off-Kilt-er.  Ha. 

The KISS MY ASS album had a bunch of interesting covers. 
Lenny Kravitz did "Deuce", which doesn't sound too far off, but had Stevie Wonder playing harmonica on it!
There was Yoshiki's classical intstrumental version of "Black Diamond", which was pretty awesome. 
And Toad the Wet Sprocket's very mellow version of Rock And Roll All Nite. 

That last one was somewhat reminiscient of Aztec Camera's cover of Van Halen's "Jump."

And of course, William Shatner's various covers of pop tunes. "Rocket Man" is something special.

THERION did a great cover of ABBA's "Summernight City." This was actually my introduction to the song.
I'd say taking a 70s-era pop song and adding dark, operatic heavy metal vocals and instruments counts as quirky, right?
