A theory I read, which makes sense (as much sense as any of it) is
that "Skywalker" is a gray Jedi.

My thoughts went that direction. Luke was the last Jedi and whatever new order that comes forth from that will be called Skywalker.

I believe they are Jedi, or Force users, without 100% commitment to
either the Light or Dark side.

Based on the mythology around the Force that’s been shown on
screen, I don’t think “Gray Jedi” are going to be a thing. My prediction is
that whatever group of Force-Users (if we even see it in this movie) that
come from Luke and Rey are simply less dogmatic and bureaucratic
than the Jedi were shown to be in the prequels.

I thought Luke had come around by the end of the film to the point where he said 'I will not be the last Jedi'.

With Luke becoming one with the Force and Rey having
about as much training as Luke in the original trilogy,
isn't she the last Jedi?

Anyone here listen to the EMPIRE podcast (podcast for Empire film magazine)?
A couple of years ago they had an interview with Colin Trevarrow after it was announced that he would be directing Episode 9.

The interviewer said the title would be The Rise of the Skywalkers.

I think he was making it up, but pretty amazing

Gray Jedi was something that was covered significantly in the new-canon novels.  (Particularly Ahsoka's).
