Other than intimidation, which won't work, I am not sure what was being achieved by this. Stormy is reputedly making very good money now and likely won't be cowed by this. I would expect this will only give her more sympathetic press given the police clearly investigated her stage show and placed themselves in positions to be "touched".
I also have to say as a Canadian you Americans have the weirdest laws between states when it comes to strippers. Strip clubs in Canada basically all have the same experience and it is way more fun than in the few I have been in the the States.

Charges have been dropped.
The statute specified someone who “regularly appears” nude or seminude at a sexually oriented business, and since this was the first of a two night special appearance, no one could argue that she was a regular performer.

It appears the law has tipped their hand. I would expect Ms. Daniels to be under a great deal of scrutiny from here on out.

A devil's advocate question, is what she did not sexual assault if she did not get consent first? Imagine a male stripper forcing a patron's hand onto his junk without consent.
When looking at the story it is more coincidence that she was charged than targeted. It seems that enforcement of this law has been prioritized this year. If what I read was correct almost as many charges in the last year as in all previous years combined. It is disconcerting that stories that would at one time be tabloid trash news is now major network "breaking news".
Provincial laws for strip clubs vary across Canada. Some are very liberal and others are more restrictive.

I have visited strip clubs in half the provinces in Canada LOL I assume the ones that are markedly different are in the other half.
Male and female strip clubs have different behaviours for the performers and the audience. My wife has been to a few male performer clubs and the stuff that happens with consent would get men beaten up and thrown out of female performer clubs.

I’m not a fan of implied consent arguments, but if you pay the cover for a strip club and approach a dancer at the rail or get a lap dance, then I think you’ve agreed to an interaction. If either the dancer or the patron say “stop” and the other party persists, then you can talk assault, but that doesn’t seem to be the case here.
