No need to explain why if you don’t want to / can’t be bothered just who’d you’d like to have met that you haven’t or will never be able to. Here’s my list:
Jim Shooter just because he was EiC at the time I got into comics and was the main man during probably Marvel’s most creative period.
John Byrne hadn’t realised until later in life that he’d been on the creative team on some of my favourite comics.
Christopher Priest known for editing Spider-Man but I love is work on Conan.
Stan Lee... cause, we’ll its Stan Lee damn it!
Stephen J Cannell he wrote The A Team
Dwight Schultz & Dirk Benedict (Murdock & Face respectively)
Brandon Tartikoff the man behind the resurgence of NBC and the guy who green lit most of my favourite shows on that network
Eddie Murphy. A great comedian back in the 80s
Ade Edmonson and Rick Mayall of the tv show Bottom. I actually had a chance to meet Rik as he was walking down the street from where I work but bottled it as he was talking to someone and didn’t want to interrupt him (also worried he’d tell me to do one which would have been devastating to me haha).

Our host would be one!
I'd have liked to have met Nelson Mandela.
There are a few WWF wrestlers I'd have enjoyed meeting.
William Shatner is another one.

I crossed a street at Comic-Con one time with Will Eisner. He gave me a smile when he saw that I recognized him (after a doubletake). I wished I had at least shook his hand or something. He seemed nice enough, but I always hate to intrude.
I also was at a Comic-Con counter with Dave Stevens for something (I don't even remember what) and I recognized him immediately. I should have said something then, but I suppose I thought there'd be time in the future for more than a quick fanboy gushing. Who knew that he would die within the next couple of years?

My job and life in general have created interesting intersections with a lot more famous people than I might ever have imagined back when I was sitting on the edge of the world, up in Canada. If this game allows a time machine, tho, I'd like to meet Abraham Lincoln*, of course. Isaac Asimov. Bertrand Russell. Frank Hampson. Frank Bellamy. Elizabeth I*. --—---- * There is an inherent danger in time travel, of course. The further back we go, the worse things are going to smell. It would rather diminish the moment to meet Mr. Lincoln and discover that, in that age of the "Saturday night bath," he might have (to us) overwhelming BO!!

He was a grad of the University of Md. I met Jim Henson in 1975 when he was the Grand Marshall for the Univ. of MD Homecoming. He had a special meet and greet for a group that I was part of. Delightful man and generous with his time.

I started attending conventions again about 5 years ago after a break of almost 20 years. It's allowed me to meet many of the heroes of my childhood/teens/early 20's, and some more recent ones.
But, having not made it to New York or Vegas, I still haven't met JB. This forum takes some of the sting out....and it's allowed more "conversation" than any few minutes of book signing would.
I never got to meet Leonard Nimoy. Or even see him in person. DeForest Kelly, same. I've seen the rest of the TOS bridge crew at one time or another over the years, including their Captain.

I think Daniel Day Lewis would be really interesting, but I would only meet him if he was into it. Unfortunately my kind goes to a swanky dinner party and I am peppering him with questions about Daniel Plainview as he nervously looks for the exit. And then they serve milkshakes for dessert.
So maybe Jack Kirby instead.
