I think judo would be an appropriate skill for Ben and especially useful against the Hulk.

I just don't see Ben training in that way.

Well, he wouldn't necessarily have to become a judo expert, but I could certainly see him incorporating a few moves.

DOesn't Ben have the advantage in smarts in a fight with the Hulk? Couldn't he use some of that to make more of a fight out of it.

Trick the hulk to fall into a vat of molasses and slow him down. Dump some chicken feathers on him and have all of his friends come out and laugh at the Hulk.

That's how a Yancy Streter would  do it!

That's a hilarious visual, but I'm not sure being "molassessed and feathered" would impede the Hulk.  And having people laugh at him would only piss him off.

As said eariler, I also see Ben being a slow brawler.  He'd go melee and use cars, the street whatever he'd get his hands on.

Another way of looking at it, is look at the times he fought Namor when he wasn't in the water.  Namor could out move him and deck him numerous times.

Aaron Poehler says

"It's a myth that martial arts will allow you to beat up people bigger and stronger than you are. It helps, but size and strength generally win out."

Yeah, I agree that this is true... in the REAL world. But in comic books we see people like Batman, Daredevil and Captain America take on folks many times bigger/stronger than themselves. Its a genre thing.

The genre thing is why I'm not really down with the Thing getting too martial artsy. In the past he has demonstrated knowing some pretty good wrestling holds.

But if we're gonna go a bit outside concept with the Thing, here's a way he could enhance his effectiveness: He could learn archery, and have Tony Stark design a compound bow with a pull of, say 65 tons and some adamantium arrows. That'd get Hulk's attention.

NOW we're talking! Hilarious post Greg.

+++++++++++
It's a myth that the martial arts will allow you to beat up bigger people
but from what I've seen, it's not a myth that training can help. I also don't
see Ben as being opposed to learning something new.

Ben Grimm has already mastered the greatest fighting discilpline ever devised profesional wrestling.  One day Ben will clobber the Hulk with a backdrop driver or Stone Cold Stunner.

Well, Ben could probably beat the Hulk at poker.

Changing the direction a bit:

What about Simon Williams, Wonder Man?

Ben being set in his ways is one thing. Simon looks like exactly the type of guy who'd take up Jeet Kune Do or something. But placing it in comic book terms, why isn't Simon getting rigorous fight training? Coupled with his immense strength, and using submission holds and such, why wouldn't Simon become the most unbeatable fighter in the MU?

Chuck Norris ability, say...coupled with power like that, is unstoppable.

And this wouldn't even be a bizarre out-of-left-field thing. Actors take up martial arts for films, like Matt Damon, and then become serious proponents of it. No mistake, Chuck Norris and Jet Li were the real thing, but Jason Statham is a pretty proficient martial artist I wouldn't want to tangle with.
